5 lb Macintosh
1.5 lb Granny Smith
4 Red Delicious, large for pink color
3 Gala
3 Tbsp lemon juice
1/2 cup water
1/2 cup sugar
Sugar to taste
Cinnamon, optional
Directions
Simmer all ingredients until apples are cooked
Use a food mill to purée all cooked apple, medium coarseness Ifhave option
Add sugar to taste while still warm
Chill and serve
Variations
Use a variation of apples, but only a few red delicious for color. Granny Smith make tarter. Honey crisp work well. Key is mix types.
