Ingredients
2 cans white shoe peg corn
2 cans black beans
1 package crumbled feta
1 bunch fresh scallions
1/2 c. red wine vinegar
1/2 c. extra light olive oil
2 Tbsp sugar
1 Tbsp garlic powder
1 tsp salt
1 tsp pepper
Directions
Drain and rinse peg corn and black beans.
Slice fresh scallions.
Combine corn, scallions, beans, and crumbled feta.
In separate bowl, whisk red wine vinegar, olive oil, sugar, garlic powder, salt and pepper.
Add dressing to corn, beans, feta and scallions and toss to coat.
Refrigerate for 2 hours for best flavor.
