Ingredients
1 Tbsp olive oil
2 cloves garlic minced
1 small onion chopped
10 oz spinach fresh (washed) or frozen (thawed and drained)
6 eggs beaten
1 1/2 c shredded mozzarella
1 c shredded cheddar cheese
1/2 c ricotta cheese
1 Tbsp parsley fresh,chopped
pinch nutmeg
1/8 tsp salt
pinch pepper
Directions
Spray 10 pie plate with non-stick spray
Preheat oven to 350F
Over medium-high heat, heat olive oil in a large skillet
Add garlic and stir fry for about 1 minute
Add onions and cook for about 5 min or until softened
Add spinach and cook, stirring until it has lost its moisture
Meanwhile, combine eggs, cheese, herbs and spices
Remove spinach mixture from heat and set aside to cool slightly
Combine cheese and spinach mixture and pour into prepared pie plate
Bake approximately 40-44 minutes until mixture has set
Variations
I use 7 eggs, bout 1/2 Tbsp dry parsley
