2 - 9 layer cakes
Ingredients
2 1/4 cups flour - enriched CAKE flour
3 teaspoons baking powder
1 teaspoon salt
1 1/4 cups granulated sugar
1/2 cup shortening, extra for greasing pans
1 cup milk (preferably whole) split into 3/4c and 1/4c
1 teaspoon vanilla
2 eggs unbeaten
Directions
Grease 2 - 8 pans all around with shortening using wax paper to spread to all edges and corners.
Add small amount of flour to coat all of the grease in pans
SIFT together flour, baking powder, salt, and sugar
Add shortening and 3/4c milk
Beat for 2 minutes at low to medium speed
Add remaining 1/4c milk, eggs, and vanilla
Beat 2 more minutes
Pour into greased, floured 8 pans
Bake at 350 for 35-40 minutes
Allow to cool 10 minutes before removing from pan. Then allow to cool completely before dressing with icing.
Variations
Easter cake: Use square 8 pans. 7 min Icing. Ice one layer, add freshly grated coconut, top with second (or more) layers of cake. Icing top and all sides and coating with fresh coconut. Must add coconut in timely fashion as icing sets quickly.
