Ingredients
3 Tbsp flour
3/4 c. sugar
4 Tbsp lemon juice
1/2 tsp grated lemon rind
1 Tbsp shortening (margarine/butter) melted
2 slightly beaten egg yolks
1/8 tsp salt
1 c. milk
2 stiffly beaten egg whites
Directions
Mix sugar and flour together
Add lemon juice, grated rind, shortening egg yolks, salt and milk. Mix well
Fold in egg whites
Pour in unbaked pie shell
Bake in moderate oven at 375° for about 40 minutes
