Ingredients
16 oz cream cheese
2 eggs room temperature
1 teaspoon vanilla extract
1 teaspoon lemon juice
1/2 cup granulated sugar
pinch of salt
1 cup graham cracker crumbs
4 tablespoons butter melted
2 tablespoons granulated sugar
Directions
Crust: mix 2 tbsp sugar and graham cracker crumbs, add melted butter until mixed well as though wet sand
Place in cupcake cups divided. Press down with spoon. Bake at 325 degrees about 5 minutes until golden.
Filling: Mix cream cheese and 1/2 cup sugar. Then add eggs. Finally mix in salt, lemon juice, and vanilla.
Fill baked crust cups about 2/3 with filling.
Bake at 325 degrees until filling doesn't run and starts to crack. Try not to allow to brown.
Top with fresh fruit, pie filling, or any way you like.
