Ingredients
3 Tbsp oil
2 boneless chicken breasts
2 cloves chopped garlic
2 Tbsp soy sauce
1 Tbsp sherry
1 Tbsp cornstarch
1/4 tsp ginger
1 medium green pepper, diced
1/2 c. cashews
Directions
Slice chicken breasts into thinly sliced strips. Heat oil in 12x8 dish on HIGH 2.5 to 3 min.
Combine chicken, garlic, soy sauce, sherry, cornstarch & ginger.
Add to dish. Cook HIGH 2.5-3.5 min; stir twice.
Add green pepper & cashews. Cover with plastic wrap.
Cook on HIGH 2.5.-3.5 min, or until chicken and peppers are tender; stir once.
Let stand, covered 3 minutes before serving. Serve over white rice.
