Ingredients
2 Tbsp chopped garlic
medium sweet onion
2 tsp olive oil
1 lb orzo
1-3/4 c. chicken stock
fist full of fresh basil
3 sprigs fresh rosemary
lemon juice
10 oz. spinach
Directions
Saute garlic and onion in olive oil until slightly tender
Add orzo and chicken stock, cover and cook 3 minutes on medium heat
Add rosmary and basil cover and simmer until liquid evaporates
Turn heat to low, add lemon juice and spinach, stir to combine and cook for 1 minute until spinach is heated through
