Ingredients
1 stick butter/margarine
2 medium onions, chopped fine
mashed potatoes (12 servings)
6 lasagna noodles
1 lb mozzerella cheese
8 oz. grated cheddar
parmesan cheese
Directions
Melt butter, saute onions 10-15 min. Cook noodles per box instructions, rinse and drain
Add onions to potatoes. Prepare mashed potatoes or instant mashed. Note: add additional milk to make spreadable
Spray 9x13 pan with cooking spray. Put a thin layer of potato mixture over the bottom of pan
Place a layer of noodles on potato (about 3 noodles). Use remaining potato and layer on top of noodles
Sprinkle generously with parmesan cheese. Spread about 1/2 of each grated cheese over the potato. Add 3 noodles
Spread remaining grated cheeses over top noodles. Sprinkle with parmesan cheese
Bake at 350F for 45 min with foil cover, 15 minutes without. (325F with glass casserole dish)
Stand about 15 min; serve
