Ingredients
1.5 cups fresh pumpkin, cooked and pureed
1 cup sugar
Pinch of salt
Nutmeg, sprinkle
Ginger, sprinkle
2 eggs beaten
1 cup scalded milk (best if whole or 2%)
1 unbaked pie crust in 9 inch pie plate
Cinnamon
Directions
Mix together pumpkin, sugar, salt, nutmeg, and ginger in bowl
Add in beaten eggs
Next very slowly add in scalded milk. If added too quickly, it may curdle.
Pour into pie crust.
Sprinkle cinnamon lightly over the stop.
Bake on lowest rack for 10 minutes at 450 degrees.
Then turn heat to 350 degrees and continue baking on lowest rack for approximately 40 minutes or until done. Toothpick test it.
Variations
Some people use 1/2 cup brown sugar and 1/2 cup white sugar. Louise uses all white sugar.
Fresh pumpkin: ugliest pumpkins are best. Cut into pieces after halving and scraping out all seeds and membranes. Don't want any strings left. Peel completely. Cut into smaller pieces about 2-3 in. Put in pot. Cover w/ water. Boil until soft.
Then put pumpkin through food mill.
Scald milk by heating in the microwave. Keep an eye on it to start boiling. In 1 cup glass measuring cup, took around 2 minutes to boil 1 cup on full power.
