Enough to top & sides of 2-9 cakes or 24 cupcakes
Ingredients
2 egg whites, unbeaten
5 Tbsp Water
1 tsp Vanilla extract
1.5 Cups Sugar
1.5 tsp light Corn Syrup
Directions
Combine egg whites, sugar, water, and corn syrup in top of double boiler with an electric mixer until well mixed.
Place over rapidly boiling water.
Beat constantly with an electric mixer over heat for at least 7 minutes or until frosting will stand in peaks.
Remove from boiling water.
Add vanilla.
Beat again until thick enough to spread.
Variations
When using for Coconut cake - must spread and add coconut in a timely manner to allow coconut to stick before icing hardens.
