Ingredients
2 tsp. crushed garlic
1 medium sweet onion, chopped
2 Tbsp. olive oil
1 lb orzo
1-3/4 c. chicken stock
fistful of fresh basil, chopped
3 sprigs rosemary leaves, chopped
1 lemon wedge
10 oz. spinach (no water)
Directions
Saute garlic and onion in olive oil over medium heat for 3 minutes until slightly tender.
Add orzo and chicken stock, cover and cook for about 3 more minutes.
Add rosemary and basil and cover and let simmer about 5 minutes until liquid has evaporated.
Turn heat to low, add lemon juice and spinach; stir to combine.
Cook about 1 minute until spinach is heated through.
