Ingredients
1 c. chopped onion
3 lb pork roast
3 c. cubed potatoes
4 cloves minced garlic
carrots
1 c. water
1/2 c. ketchup
3 Tbsp red wine vinegar
2 Tbsp light brown sugar
2 Tbsp red. sodium soy sauce
1 tsp Dijon mustard
1/2 tsp black pepper
salt
Directions
Arrange potatoes and vegetables in bottom of crock pot.
Place pork on top and spread garlic all over pork.
In a bowl, whisk water, ketchup, vinegar, sugar, soy sauce, mustard, pepper, and salt. Pour over pork.
Cover. Cook on LOW for 6 to 8 hours, HIGH for 3 to 4 hours.
Slice. Serve with vegetables.
